Cauliflower Salad

Instructions
  1. Steam cauliflower for about 8 mins – until just tender. Allow to cool.
  2. Lightly toast almonds – pour a little oil or olive oil into a frying pan. When hot add the almonds and either stir gently with a wooden spoon or flip in the frying pan – DO NOT LET THEM BURN
  3. Sprinkle the cauliflower with lemon juice – sorry, I can’t give you a quantity for this as it depends on how much cauliflower you have.
  4. Sprinkle with veggie spice. Gently toss the cauliflower and almonds in the Greek yogurt. Chill

  1. Mix all the dry ingredients together in a large bowl.
  2. Add the buttermilk and cheese and mix together thoroughly.
  3. Spoon the mixture into a lined and greased loaf tin. Bake in a preheated over at 180ºC for 40 – 50 minutes.

  1. Cut corn off cobs and boil until tender - ±4 mins Slice red onion very thinly.
  2. Place mielies, onion tomato and cheese into a bowl. Whisk the dressing ingredients until emulsified and bowl over salad. Toss gently.

  1. Preheat oven to 180 °C Arrange butternut on a roasting pan and sprinkle with pepper. Mix together the olive oil and honey and pour over. Bake for about 25 minutes until butternut is done but still firm.
  2. Carefully turn the butternut, sprinkle with cranberries, pumpkin seeds and cheese and bake a further 10 – 15 minutes to allow the cheese to melt slightly. Serve on a bed of mixed lettuce.

  1. Preheat oven to 180°C. Grease a 22cm x 11cm medium loaf pan with cooking spray. Combine the flour, sugar, cheese and beer in a bowl with a pinch of salt and mix together well.
  2. Spoon into prepared pan and level the surface with the back of a spoon. Pour melted butter over the top.
  3. Bake for 55-60 min or until golden brown and cooked when tested with a skewer. Cool in pan for 15 min before transferring to a wire rack to cool completely. Serve warm or cool.

  1. Fry chicken gently to cook through and allow to cool. Cut into strips. Mix all the salad ingredients, add chicken and toss well. Sprinkle with mixed nuts. Blend the dressing ingredients and pour over or serve separately.

  1. Turn oven on to 180°C, grease a shallow baking dish.
  2. Arrange the pumpkin pieces in the baking dish. Sprinkle pieces with salt & pepper. Cover with a lid of foil and bake for 35 minutes.
  3. Melt butter & golden syrup on the stove over low heat. Stir in the breadcrumbs.
  4. Take the foil lid off and pour the crumb mixture all over the pumpkin. Bake it (uncovered) for 20 minutes.

  1. Sift the flour and cornflour into a mixing bowl. Add the baking powder, salt and pepper.
  2. Lightly beat the eggs and milk together. Using a wire whisk or fork, and the milk mixture, a little at a time, until a smooth batter is formed.
  3. Fold in the spring onions, green pepper, herbs, potatoes and chilli.
  4. Heat the oil in a large frying pan and drop spoonfuls of the batter into a pan. Flatten lightly with the back of the spoon.
  5. Cook for 2 - 3 minutes on each side until golden. Drain on kitchen paper

  1. Mix cornflour, flour and cayenne pepper and coat meat.
  2. Heat butter and oil in base of potjie pot and sauté onions and brown sugar.
  3. Add bacon and garlic and sauté for a further 3 minutes.
  4. Add beef and brown evenly on all sides.
  5. Layer chopped or tinned tomatoes on top of beef, then potatoes and then carrots.
  6. Add mixed herbs, bay leaf, salt, pepper and vinegar to beef stock and pour over vegetables.
  7. Then pour beer over.
  8. Put lid onto pot and leave unopened for 1 hour.
  9. Remove lid and check fluid level. Add more stock or beer if necessary.
  10. Close and cook for a further 30 minutes to one hour – or until vegetables are soft.
  11. Do not stir the pot continuously as the vegetables will turn to mush.
