  1. Mix all the dry ingredients together in a large bowl.
  2. Add the buttermilk and cheese and mix together thoroughly.
  3. Spoon the mixture into a lined and greased loaf tin. Bake in a preheated over at 180ºC for 40 – 50 minutes.

Instructions
  1. Preheat the oven to 200°C. Grease 2 large baking sheets. Roll out the pastry on a lightly floured work surface to form 20 x 30cm rectangle. Trim the edges with sharp knife.
  2. Place the nuts and sugar in a bowl and mix together. Brush the pastry with egg white and sprinkle with three quarters of the nuts and sugar. Fold the long sides of the pastry so that they reach halfway towards the centre. Fold again so that they just met in the centre and roll gently with a rolling pin to flatten very slightly. Brush with a little more egg white and sprinkle the remainder sugar and nuts over the surface. Fold in half down the centre and gently flatten again with the rolling pin.
  3. Using a sharp knife, cut the roll into about 20 thin slices and place cut side down on the baking sheets, spaced well apart. Bake in the preheated oven for 10 minutes. Remove from the oven and turn the palmiers over. Return to the oven and bake for a further 5 minutes, or until golden and crisp. Transfer to a wire rack to cool completely.

  1. Whisk the flour, salt and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and kneed a few minutes until smooth and elastic.
  2. Divide the dough into 24 equal pieces and roll each piece into a ball. Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla.
  3. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side.

  1. Preheat oven to 180°C. Grease a 22cm x 11cm medium loaf pan with cooking spray. Combine the flour, sugar, cheese and beer in a bowl with a pinch of salt and mix together well.
  2. Spoon into prepared pan and level the surface with the back of a spoon. Pour melted butter over the top.
  3. Bake for 55-60 min or until golden brown and cooked when tested with a skewer. Cool in pan for 15 min before transferring to a wire rack to cool completely. Serve warm or cool.

  1. Preheat oven to 180°C.
  2. Sift flour, sugar, bicarbonate of soda and salt into a bowl. Add all bran and raisins.
  3. In a bowl beat together eggs, oil, vanilla essence and buttermilk, then mix it into the dry ingredients.
  4. Lightly grease muffin pan and spoon in the mixture (2/3 full). Bake in the preheated oven for 20 minutes.

  1. Cut the crusts off the bread and slice each piece into three rectangles.
  2. Place the prawns, spring onion, garlic, ginger, salt and pepper in a food processor and blend for 2 minutes, or until the mixture is a fine past.
  3. Spread 1 tablespoon of paste onto each slice of bread.
  4. Pour about 1 cup of oil into a frying pan (1cm up th sides) and place over a medium heat.
  5. Once the oil is hot enough (test with an off cut of bread - it should sizzle immediately), fry a few toasts at a time, flipping them over after 30 seconds. Make sure the prawn paste has turned pink and the bread is golden and crisp. Drain on a paper towel and serve hot.

  1. Preheat oven to 200°C Lightly dust a baking tray with flour Sift flour, baking powder, salt and castor sugar together Rub butter into flour mixture until it resembles breadcrubs
  2. Mix egg and milk together Add egg mixture to dry ingredients and, using a butter knife, mix gently until mixture just comes together and forms a soft dough Turn out onto a lightly floured surface and pat into 3cm thick square Cut out scones using a round cutter. Re-form excess dough and cut out more scones Place on prepared baking tray
  3. Bake for 15 - 18 minutes, until golden brown and scones make a hollow sound when tapped Cool on a wire rack

Serve scones with jam and dollops of whipped cream

  1. Place the buck wheat flour, cake flour and baking powder into a bowl.
  2. Gradually whisk in egg and buttermilk, until the mixture is smooth. Stir in the melted butter, chives and seasoning
  3. Cook the blinis in batches, by dropping tablespoons of batter into a heated non-stick frying pan. Cook on one side until bubbles form on the surface, turn over using a spatula and cook on the other side until brown.
  4. Keep the blinis warm in a tea towel if serving warm, or place on a wire rack to cool.
Recipe Notes

To serve, spread the blinis with Cream Cheese and top with smoked salmon and dill.

  1. Bring milk to the boil.
  2. Remove from heat and stir in castor sugar and butter. Cool.
  3. Sift cake flour, salt and spices.
  4. Make a well in the center and add the yeast and warm milk mixture.
  5. Stir until a soft, sticky dough is formed.
  6. Transfer dough to a lightly floured surface. Add fruitcake mix and knead for 5 minutes.
  7. Divide into 12 balls, place on a greased baking tray. Cover and prove until double in size (leave in a warm place, away from droughts).
Cross
  1. 125ml self-raising flour, ½ tsp sugar and ¼ cup (60ml) water.
  2. Mix together and then pipe onto buns in a cross, or roll gently and place on top.
  3. Bake for 20 – 25 minutes at 180ºc or until golden brown.
  4. When you remove the buns from the oven, spread them with some butter or brush them with a sugar glaze to give them a shine.
