Instructions
  1. Steam the aubergines with the skins on for about 20 minutes, until soft. Slice them in half long-ways and pull off the skin and dice into small pieces. (need to fit into the cannelloni tubes)
  2. Fry the onion and garlic until glassy and fragrant. Add the mince and fry until cooked, breaking up with a wooden spoon. Add the tins of tomato, water, aubergine and salt and pepper. Simmer for about 20 minutes until the sauce reduces and thickens.
  3. Preheat oven to 180°C. Fill the cannelloni, holding the cannelloni tube upright on a plate and spooning in the mince and sauce. Turn the cannelloni on its side and place in a baking dish.
  4. When you have a full layer of cannelloni in the baking dish, top with 1 cup of grated cheese and then start with the next layer. Keep just enough mince to top the cannelloni with a thin layer of mince and sauce. Set aside for 20 minutes to allow the pasta to soften.
  5. Sprinkle with the grated cheese and bake for 30 - 35 minutes until the pasta is cooked and the cheese is golden.
  6. Garnish with the chopped parsley and basil and serve.

  1. In a large pot, heat the oil and cook onion for 2 - 3 minutes.
  2. Add the carrots, pumpkin, potatoes, ginger, cinnamon and cook over a low heat, stirring for about 5 minutes.
  3. Add stock, evaporated milk, sugar and seasoning and simmer half covered until vegetables are soft.
  4. Cool a little, then puree until smooth.
  5. reheat gently and serve with suggested garnishes.

  1. Preheat oven to 160°C
  2. For Pastry: Mix all ingredients to a soft pastry in a food processor. Cover and allow to rest in the refrigerator for 1- - 15 minutes. Press pastry into the base and sides of a 24cm disposable foil tart dish (picnic in mind)
  3. For Filling: Place the vegetables together in an oven roasting pan. Drizzle with the olive oil and toss to cover. Season to taste and roast in a preheated oven at 220°C until vegetables are tender. Allow the vegetables to cool and spread evenly over the base of the pastry, sprinkle the blue cheese over.
  4. Beat eggs, milk, sour cream and lemon juice together. Add pecorino cheese, mustard, salt, pepper and herbs and mix well. Pour onto base. Bake for 45 minutes or until set. Allow to cool slightly and serve garnished with fresh basil or rocket leaves.

Instructions
  1. Place the buck wheat flour, cake flour and baking powder into a bowl.
  2. Gradually whisk in egg and buttermilk, until the mixture is smooth. Stir in the melted butter, chives and seasoning
  3. Cook the blinis in batches, by dropping tablespoons of batter into a heated non-stick frying pan. Cook on one side until bubbles form on the surface, turn over using a spatula and cook on the other side until brown.
  4. Keep the blinis warm in a tea towel if serving warm, or place on a wire rack to cool.
Recipe Notes

To serve, spread the blinis with Cream Cheese and top with smoked salmon and dill.
