  1. Cook the pasta until al dente.
  2. Drain well, ensuring that all the moisture is removed.
  3. Stir in 2 tsp of oil.
  4. Heat the remaining oil in a frying pan, add the garlic and cook, turning over medium heat for 4 – 5 minutes until browned.
  5. Combine the pasta, peppers, parsley, pumpkin and chicken in a bowl. Top with the feta and drizzle with dressing.
Dressing
  1. To make the dressing, briefly process the olives in a food processor.
  2. Add the oil gradually until mixture is smooth, then add the vinegar.
