Instructions
  1. Line a 30cm loaf tin with clingfilm. Scatter almonds evenly over base.
  2. Whip cream until soft peaks form and fold through custard. Whisk egg whites to soft-peak stage. Fold through custard mixture. Halve custard mixture and add lemon to one half and berries and pineapple to other half. Press slices of sponge gently on top and sprinkle with brandy.
  3. Wrap tin in clingfilm and freeze for 4-5 hours or until set. Remove from freezer 15 minutes before serving. Decorate with fresh berries.
